  <ingredient amount="1">              red onion, chopped coarsely</ingredient>
  <ingredient>                         cilantro, to taste, chopped</ingredient>
  <ingredient amount="3" units="Tbsp"> rice vinegar</ingredient>
  <ingredient amount="1" units="Tbsp"> sugar</ingredient>
  <ingredient amount="1/2" units="tsp">salt</ingredient>
  <ingredient>                         black pepper, to taste</ingredient>
  <ingredient>                         dried red chili (not powder) to taste</ingredient>

  <direction>
    Toss together <i>cucumber</i>, <i>onion</i> and <i>cilantro</i>.
  </direction>

  <direction>
    Mix <i>dressing ingredients</i> together and pour over salad.
  </direction>

  <notes>
    Obviously better as a summer salad, this is nonetheless always
    a big hit on our New Year's Day (winter, in this hemisphere) Brunch.
